Einkorn is the original wheat. Its’ cultivation dates back 10,000 years and the wild grain has been gathered by people for 30,000 years. It is a very low yielding wheat variety that is able to grow in harsh, dry conditions. The firm outer hull is more resilient than modern wheat and therefore Einkorn must be dehulled before milling. This is an added step in the harvesting process and similar to other heritage grains such as Spelt.
Einkorn does contain gluten but some find it easier to digest as compared to modern wheat. It is high in protein, fat and keratin. If you are looking for the typical stretch and rise (gluten development) from your dough, then Einkorn cannot be used on its own. For good stretch and the enhanced flavour profile from Einkorn, you can add about 25% to your bread recipes.
