1847 Stone Milling - Wedding Cake

Daily Grind Wedding Cake

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 4 cups Daily Grind flour
  • 2 cups mashed ripe bananas (approx. 6 bananas)
  • 1 cup soured milk (add 2 tsp. lemon juice)
  • 2 tsp. vanilla
  • 2 tsp. salt
  • 2 tsp. baking powder

Directions

  1. Pre-heat the oven to 350˚F.
  2. Grease and line with parchment paper one 8″ X 3″ round cake pan or two 6 X 3″  round pans to make a tiered cake.
  3. Cream butter and sugar. Mix in eggs one at a time. Add vanilla and mashed bananas. Sift flour, baking powder and salt together and add to wet ingredients alternately with soured milk. Pour into prepared pans and bake for 80-90 minutes or until done.
  4. Let cool slightly in pan then turn out onto cooling rack
Icing
  • 1 cup butter
  • 4 cups icing sugar
  • 4 tsp. vanilla
  • Cream (use as much as needed until icing is light and fluffy)
