Emmer is the second oldest cultivated grain after Einkorn. It is rarely grown due to its lower yield and demand. It has been grown throughout Italy, the middle east and Northern Africa. Once grown, the grain is dehulled, in an extra process, after being harvested. The grain can be ground into great flour for bread, pasta, roti and naan. It can also be steamed or boiled to create a rice-like dish. It is a highly versatile grain used over the past 8,000 years.
