Einkorn is a heritage grain that bursts with flavour and an exceptional soft texture. Because of the dehulling process, the Einkorn berry is natural low in bran and gives a performance similar to Cake and Pastry flour. Enjoy these waffles with Canadian maple syrup and topped with whipped cream and your favourite fruit.
Ingredients
- 2-1/4 cups Einkorn flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1-3/4 cups milk
- 1/2 cup melted butter
- 1 teaspoon vanilla
Directions
- In a medium bowl stir together flour, sugar, baking powder and salt. If you have a stand mixer, the dry ingredients can be combined in the mixing bowl.
- In another bowl beat the eggs; whisk in the milk, melted butter and vanilla. Add the wet mixture all at once to the flour mixture. Stir to combine, not worrying about a slightly lumpy batter.
- Pour 1/4 to 1/2 cups batter into grids of a preheated**, lighted greased waffle iron. Close the lid quickly and wait until done before opening. Use your waffle makers instructions to fine tune. When done, use a fork to lift waffle off grid. Repeat and serve warm.
**Pro tip, a 1/4 cup (2 Oz) ice cream scoop works perfectly to dose the waffle batter onto the waffle iron.
